Mom’s Chewy Oatmeal Cookies

I tend to be one of those people who says, “Oatmeal cookies? How about chocolate chip if you’re going to eat a COOKIE?” But I love these oatmeal cookies that my mom makes. I don’t know if it’s a good thing or a bad thing that they are mildly healthy since it makes me want to get two or three. Or, you know, nineteen.

Chewy Oatmeal Cookies

1 cup canola oil
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla
1 1/4 cup whole wheat flour
1/4 cup flaxseed meal
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3 cups old fashioned oatmeal
chocolate chips, nuts, raisins, etc.

Preheat oven to 350 degrees. Mix together canola oil, brown sugar, white sugar, eggs and vanilla in Kitchenaid mixer with the flat beater. Add flour, flaxseed meal, baking soda, salt and cinnamon. Slowly add oatmeal. Add chocolate chips, nuts, craisins, golden raisins, etc.

Place small scoops of dough on baking sheet and bake for 10-13 minutes. They will be very soft when they come out of the oven, but hold together well when cooled.

    Mmmm, a new recipe to try. I loooove oatmeal chocolate chip cookies, as you know — the oaty texture makes them extra delicious!

  2. Suzannah and I needed an afternoon project today…this was it! Love them!

    (Of course she CRIED when I made her wait three minutes to eat one after they came out of the oven, but otherwise…success!)
